I’m a huge fan of those fresh marinated anchovies that I find at my local market, not far from home… Fresh anchovies are super healthy as they are loaded with omega 3 and amino acids and not too salty (not as the pizza anchovy). They can be kept for a long time in your fridge as long as they are kept in their delicate vinegar. Add to those roasted tomatoes, small capers and grated Parmesan cheese…’Mamma mia’! Ingredients:
- 1 kg gluten-free pasta (ideally spaghetti)
- 20 fresh marinated anchovies, drained
- 16 small tomatoes (with their sprigs)
- 6 tsp fine capers, drained
- 1 cup grated Parmesan cheese
- 2 tbsp & 1tsp olive oil before serving on each plate
- Guérande salt and pepper
Recipe:
- Preheat your oven to 300°F
- In an oven dish, display the tomatoes and drizzle with olive oil. Cook the tomatoes till they are slightly roasted and caramelized
- Cook your gluten-free pasta
- Place the pasta in your plates, top with anchovies, capers, roasted tomatoes and Parmesan
- Drizzle with the teaspoons of olive oil and add salt and pepper to taste before serving
