Gluten-Free Pasta, Roasted Tomatoes, Marinated Anchovies & Capers

I’m a huge fan of those fresh marinated anchovies that I find at my local market, not far from home… Fresh anchovies are super healthy as they are loaded with omega 3 and amino acids and not too salty (not as the pizza anchovy). They can be kept for a long time in your fridge as long as they are kept in their delicate vinegar. Add to those roasted tomatoes, small capers and grated Parmesan cheese…’Mamma mia’! Ingredients:

  • 1 kg gluten-free pasta (ideally spaghetti)
  • 20 fresh marinated anchovies, drained
  • 16 small tomatoes (with their sprigs)
  • 6 tsp fine capers, drained
  • 1 cup grated Parmesan cheese
  • 2 tbsp & 1tsp olive oil before serving on each plate
  • Guérande salt and pepper

Recipe:

  1. Preheat your oven to 300°F
  2. In an oven dish, display the tomatoes and drizzle with olive oil. Cook the tomatoes till they are slightly roasted and caramelized
  3. Cook your gluten-free pasta
  4. Place the pasta in your plates, top with anchovies, capers, roasted tomatoes and Parmesan
  5. Drizzle with the teaspoons of olive oil and add salt and pepper to taste before serving
