Quinoa, Kale, Avocado, Pomegranate, Pistachios & Raisins

Here’s a recipe with amazing benefits for your health! Firstly pomegranate, loaded with key vitamins such as C, B5, A and E, but also minerals such as potassium and folic acid. Pomegranate seeds are full of antioxidants fighting free radicals and the aging of your cells. I’ve already glorified avocado in previous recipes with its fibers and antioxidants, not to mention the benefits of kale, quinoa … what are you waiting for? This salad is a ‘must-do’ for Summer ! PS: you hate peeling pomegranate? Here are two very simple ways to peel the seeds!

Roll the fruit first to loosen the seeds. Score around the middle with a knife and tear it open into halves. Hold each half over a bowl, seeds facing down and tap the skin with a wooden spoon, squeezing a little to release the seeds. Another technique is to draw 4 lines from top to bottom to quarter the pomegranate with a knife. Submerge the pomegranate in a bowl of water and and pull apart the quarters, releasing the seeds with your hands. The pith will float and the seeds will sink. Remove the pith and discard, then drain the seeds.

  • 1 peeled pomegranate
  • 1 avocado, peeled, stoneless and diced. Drizzle with the juice of half a lemon

  • 1 handful parsley leaves, chopped
