I’ve made 3 salads this week with quinoa and here’s the third one ! I had the idea when I saw those amazing and colorful radishes at my local market; some yellow, some pink and even some purple ones like little gems and jewels… With cucumber, lemon, mint and a sesame sauce…delicious! Ingredients:
- 1/2 cup white quinoa
- 1/2 cup red quinoa
- 1 peeled cucumber, seedless and diced
- 1 cup radishes, washed and cleaned
- 1 handful mint leaves, chopped
- the zest of half a lemon
- salt and pepper
For the sauce:
- 2 tbsp sesame seeds
- 2 tbsp cane sugar
- 4 tbsp tamari
- 2 1/2 tbsp tahini
- 2 tbsp sesame oil
Recipe:
- Cook the quinoas in cold salted water till tender. Drain and set aside
- Slice thinly some radishes and keep some whole for the salad
- Prepare the sauce by mixing all the ingredients
- Mix the quinoas with the other elements of the salad ad top with some sauce
- Season to taste
