Roasted Peaches, Rucola & Parma Ham

This salad is worth trying with its sweet and sour combinations. Roasted peaches are divine with the Parma ham, the rucola, the mint flavor and the balsamic vinegar.I recommend you to try this fresh and easy to make salad. You can add buffala mozzarella if you want. PS/ As the fruits are cooked, they’ll be easily digested with the meat, even though it’ll take much longer time to digest meat. Raw fruit have to be eaten before any meal (check my post on ‘When do I eat fruits?’).Ingredients:

  • 2 middle size peaches, stoneless and quartered
  • 2 large handful rucola
  • 1 large handful rucola
  • 4 Parma ham slices
  • 2 tbsp organic olive oil
  • 1 tbsp balsamic vinegar
  • salt and pepper

Recipe:

  1. Preheat your oven to 300°F. Place the peaches in a dish oven proof and let them cook till they are tender
  2. Before retrieving them from the oven, roast them under the ‘grill’ mode, till they are slightly golden
  3. Place two Parma ham slices between two sheets of paper towel and then between two plates. Place the plates in your microwave and cook the slices for 1 minutes. The slices are going to dry and be grilled without any oil !
  4. Cut the grilled slices into thin strips. Set aside
  5. Prepare your ‘vinaigrette’ by mixing oil and vinegar
  6. In you serving plates, place the rucola, the raw Parma ham and the roasted peaches. Top with chopped mint and ham strips. Drizzle with ‘vinaigrette’ and season to taste before serving
