Roasted Banana, Coconut Cream, Vegan Caramel & Cocoa Nibs

When you try to limit dairy products, you can have caramel made of sugar and water but you tend to forget about the creamy and buttery one…

Here’s a vegan caramel recipe, made of dates and simple ingredients…no need to look for butter!

Add this caramel to roasted bananas and raw cacao nibs (superfood with vitamins and trace elements)…this dessert is a ‘must do’ !


  • 2 ripe bananas, in their skin, sliced lengthwise
  • 2 tbsp agave syrup
  • 25 cl coconut cream
  • 2 pinches of raw cacao nibs, chopped roughly

Ingredients for the vegan caramel:

  • 8 Medjool dates
  • 2 tbsp maple syrup
  • 2 tbsp coconut oil
  • 1/2 tsp vanilla extract
  • water


  1. Soak the pitted dates in water for an hour
  2. Preheat your oven to 300°F
  3. In an oven dish, place the bananas flesh upwards and brush with agave syrup
  4. Let them roast till they are slightly golden
  5. Meanwhile, drain the dtes and mix them with the other ingredients till you get a smooth texture
  6. Retrieve the bananas from the oven and remove the skins with a fork and knife. Display the bananas in a bowl, add the coconut cream, the vegan caramel and the raw chopped cacao nibs
