Roasted Figs, Goat Cheese, Spelt & Rosemary

I wasn’t a great fan of figs till, one day after few tests, I became addicted and started looking for them on market stalls, roasting them, preserving and/ or reducing them, eating them raw or cooked…and as it’s the plain season, here’s  a delicious recipe of a ‘tartine’ mixing goat cheese and roasted figs. I will post very soon all my other fig recipes so you can cook and love them as much as I do. Ingredients:

  • 4 spelt slices
  • 4 tbsp fresh goat cheese
  • 4 middle size fresh figs
  • 2 fresh rosemary sprigs
  • 2 tbsp organic & cold pressed olive oil
  • Guérande salt and pepper

Recipe:

  1. Preheat your oven to 300°F
  2. Place the figs, cut in quarters, in a oven dish. Sprinkle with olive oil and top with rosemary
  3. Let them roast till they are really tender and finish with your grill for two to three minutes so they are caramelized
  4. Toast the bread slices
  5. Spread the fresh goat cheese on the bread and top with the roasted figs
  6. Season to taste
