Growing up in Africa, I’m really found of papaya. I found some amazing and tasteful ones in a small exotic fruit vendor, not far from home. Loaded with fibers, the papaya is also a highly concentrated with vitamins (especially E and C) and lots of antioxidant properties. You should have this fruit rather ripe if you want to fully enjoy its ‘great-for-your skin and body’ properties. I advise you to taste it with a lot of lime; lime juice will emphasize all of its flavors. Ingredients:
- 2.5 cup fresh papaya, peeled and diced
- 15 cashew nuts
- 4 stoneless Mejdool dates
- 1/4 tsp cardamom
- 1 salt pinch
- the juice of one lime
- half of a lime, peeled thoroughly
- 1 small handful of mint leaves, chopped
Recipe:
- The night before, let the cashew nuts soak into a bowl of water
- Place the papaya, the dates, the drained cashew nuts, the cardamom, the lime and the salt in a bowl. Mix with a blender till you reach a smooth texture
- Place the mousse in your fridge for a least 2 hours and serve chilled with the lime quarters and the chopped mint
