You should know it, if you’ve been reading my blog for a while, I’m a great tapioca fan ! Here’s a simple recipe, as simple as the other ones but with caramelized fruits. You can prepare all the components in te evening and warm up this delicious breakfast the next morning.Ingredients:
- 1/4 cup tapioca pearls (I’ve chosen big size pearls)
- 1 can coconut milk
- 1 tbsp vanilla extract
- 3/4 cup water
- 1/2 ripe mango, stoneless, peeled and diced
- 1 overripe banana, peeled and sliced
- 1 tbsp agave syrup
- 1 tbsp butter
- 1 tsp cinnamon
Recipe:
- In a pan, heat the coconut milk, the water and the vanilla
- Add the tapioca pearls and let them cook till they are translucent. Do not boil but cook on low heat for 10 to 15 minutes
- In a pan, heat the butter and place the fruits and the agave syrup. Cook on low heat till the fruits are caramelized
- Pour the tapioca into bowls and top with the fruits
- Add a pinch of cinnamon (half a tsp) and serve warm or tepid
