Coconut Milk Tapioca with Caramelized Mangos & Bananas

You should know it, if you’ve been reading my blog for a while, I’m a great tapioca fan ! Here’s a simple recipe, as simple as the other ones but with caramelized fruits. You can prepare all the components in te evening and warm up this delicious breakfast the next morning.Ingredients:

  • 1/4 cup tapioca pearls (I’ve chosen big size pearls)
  • 1 can coconut milk
  • 1 tbsp vanilla extract
  • 3/4 cup water
  • 1/2 ripe mango, stoneless, peeled and diced
  • 1 overripe banana, peeled and sliced
  • 1 tbsp agave syrup
  • 1 tbsp butter
  • 1 tsp cinnamon


  1. In a pan, heat the coconut milk, the water and the vanilla
  2. Add the tapioca pearls and let them cook till they are translucent. Do not boil but cook on low heat for 10 to 15 minutes
  3. In a pan, heat the butter and place the fruits and the agave syrup. Cook on low heat till the fruits are caramelized
  4. Pour the tapioca into bowls and top with the fruits
  5. Add a pinch of cinnamon (half a tsp) and serve warm or tepid
