Roasted Artichokes

The artichoke! The most delicious way to eat an artichoke is to eat it steamed with a good ‘vinaigrette’: you peel it slowly and eat its tender leaves, and then you eat its aniseed heart… Another way it’s to roast it (yes, I know I like to roast vegetables) with olive oil and Guérande salt…a real feast! Loaded with B9, B1 and K vitamins, full of antioxidants and minerals, it’s the perfect timing, it’s the full season for this delicious vegetable ! Ingredients:

  • 4 small size artichokes, cut in two (I have a preference for small size artichokes with their heart easy to eat and to clean)
  • 4 tbsp organic olive oil
  • Guérande salt & pepper

Recipe:

  1. Preheat your oven to 300°F
  2. Place the artichoke halves in an oven dish
  3. Drizzle with the olive oil and season to taste
  4. Roast the artichokes till they are well roasted
  5. Serve tepid
